Ingredients

  • 700 g chicken pieces
  • 1 onion, sliced
  • 5 shallots, sliced
  • 3 garlic cloves, sliced
  • 3 tablespoons sweet soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1/2 teaspoon ground pepper
  • 3/4 teaspoon salt
  • 1/2 teaspoon sugar
  • 150 ml water
  • 2 scallions, sliced
  • 3 tablespoons oil

Directions

  1. Heat the oil. Sauté shallots and garlic until fragrant.
  2. Add the chicken and cook until the surface changes color.
  3. Add the onion and cook until softened.
  4. Stir in sweet soy, oyster sauce, salt, sugar, and pepper.
  5. Pour in the water. Simmer until the chicken is cooked and the sauce thickens.
  6. Scatter scallions, taste, and serve.
  7. Plate with warm rice.

  • Medium heat prevents bitter burnt soy.
