Ingredients

  • 300 g egg noodles
  • 200 g shredded chicken
  • 1 liter chicken broth
  • 2 small bunches mustard greens
  • 4 garlic cloves
  • 4 shallots
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 tablespoon sweet soy sauce
  • Fried shallots, scallion
  • Oil

Directions

  1. Boil noodles until just done; drain.
  2. Sauté aromatics with chicken, sweet soy, and pepper.
  3. Add broth, season with salt, and wilt the greens.
  4. Bowl the noodles, ladle broth and chicken, top with fried shallots.

Kitchen tips

  • Do not overcook noodles.
  • Homemade broth tastes better.
  • Wontons are a nice add-on.
