About this recipe

Cah tauge needs high heat and a short cook so the sprouts stay crisp. It is a quick side for fried dishes.

Ingredients

  • 250 g bean sprouts
  • 3 garlic cloves, sliced
  • 2 shallots, sliced
  • 1 scallion
  • 1 tablespoon soy sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons oil
  • Sliced red chili (optional)

Directions

  1. Heat oil on high. Sauté garlic and shallot until fragrant.
  2. Add bean sprouts and chili. Toss quickly.
  3. Add soy sauce, salt, and pepper. Toss 1 minute.
  4. Add scallion and remove from heat at once.

  • Do not cover the pan.
  • Cubed tofu is a good add-in.
